Corn Bread Recipe

This one is a basic corn bread recipe.

In Europe cornmeal is usually used for the preparation of polenta (cornmeal mush), which is served individually or as a side dish with meat, fish and vegetable dishes.

Cornmeal bread is usually made in combination with other flours, while refined cornmeal is used for sauces and the preparation of desserts.

Corn bread is a delicious and popular bread well known for its outstanding texture as well as aroma. It  can be used either in baked form or rarely in fried form which is very easy to chew. Corn bread is very mushy and can be easily baked into corn cakes.

Baked Corn bread: Baked Corn bread prepared at home is the most common type of corn bread recipe which is taken with spoon by crumbling it either into a glass of buttermilk or cold milk. Baked Corn bread is a delicious dish which is too much loved by children.

Corn Bread Recipe

Ingredients:

  • 1 kg/2.2 lb cornmeal
  • 1 kg/2.2 lb soft wheat flour
  • 70 g/2.4 oz fresh yeast
  • 2 tbsp sugar
  • 1 tbsp oil (olive oil or vegetable oil)
  • 3 tbsp salt

Instructions:

Dissolve the yeast in 1 cup warm water, add sugar and 2 tbsp wheat flour. Allow it to stand for 10 minutes.

Meanwhile pour 5 cups of boiling water into cornmeal and mix it thoroughly.

When it cools to medium warm, mix it with wheat flour.

Add the yeast mixture, oil, salt and ½ cup warm water.

Mix thoroughly then place the dough in an oiled baking pan. Let it rest for 45 minutes.

Preheat the oven to 230° C/450° F and bake for 10 minutes, then reduce the oven temperature to 200° C/400° F and bake for a further hour.

After an hour take the bread out and cover with aluminum foil. Bake for another hour and 20 minutes.

Something About the History of Corn

The history of corn dates back to the year 1492 when it was discovered in Cuba. It was exported to Europe and other parts of the globe. Uncertainty prevailed as actually when it reached Europe.

Corn is known differently across many countries.

In the USA it is known as maize or Indian corn. In some, it is the leading crop and in England it means wheat. In Scotland and Ireland it is known as oats.

Corn traveled across many countries but in later stages it was considered very valuable. It became very important in South East Asia and Africa.Although the original wild form has been long destroyed. It is believed that it originated in the Valley of Mexico.

The cultivated corn actually maybe came into existence with the crossings and back crossings with gamagrass. It is the most completely domesticated as it would not have existed in its wild form.

Dent corn, flint corn, popcorn, sweet corn, waxy corn and pod corn are the various kinds of corn.

Corn was the most important crop in the Americas down the ages. Its size varied from a few feet to maybe twenty feet tall. It did not resemble across lands in its varieties.

In the eighteenth and nineteenth century the yield in America did not actually increase. More that 40% of the corn is produced in the USA. It is in the 1940’s actually the yield increased considerably.

Many industries are also associated indirectly with it such as crop processing, marketing, farm machinery and livestock.
