Olive Bread Recipe

This olive bread recipe is a Mediterranean cuisine specialty. It is also called the Mediterranean bread.

Many variations of olive bread are popular all over the Mediterranean.

If you slightly modify the basic bread recipe  - just add chopped olives in it -  you will also get a tasty olive bread.

Ingredients:

  • 1 kg/2.2 lb strong white bread flour
  • 40 g/1.4 oz fresh yeast
  • 1 teaspoon sugar
  • ½ tbsp salt
  • 5 tbsp olive oil
  • 100 g/3.75 oz green olives, sliced

Instruction:

Dissolve the yeast in ½ cup warm water and add 1 teaspoon flour and sugar. Allow to stand for 10 minutes.

Put the flour and salt in a large bowl. Add olive oil, olives and yeast mixture.

Mix well, adding as much warm water as necessary to make a soft dough.

Turn out onto a lightly floured surface and knead for about 10 minutes.

Put the dough in a lightly oiled bowl, sprinkle it with flour, cover it with plastic wrap and then leave it in a warm place for one hour (or until doubled in size).

Preheat the oven to 200° C/400° F. Brush the dough with olive oil and bake for one hour.
